Fried noodles with mango and chili meatballs

I can think of nothing easier to make, than an instant noodle soup.
Just tear of the package, read the directions and your almost done.
You can eat your soup like you did it about a 100 times ago, just a normal instant noodle soup with no mmmhhhhh´s and aaaaahhhh´s.
Or just go ahead and make yourself a dish which is going to be unbelievable.

There are no rules, just be creative and add what ever you want.
I made some fried noodles with mango and chili meatballs.
The spicy taste of the meatballs combined with the sweetness of the mango is incredible.

Fried noodles with mango and chili meatballs

  • 1 instant noodle soup
  • 1/2 leek
  • soybean sprouts
  • 1/4 mango
  • oil for frying

Chili Meatballs

  • 1/2 lbs ground beef
  • 1 small egg, slightly beaten
  • 1/4 cup breadcrumbs (or use enough to hold the meat together)
  • 1 teaspoon fresh minced garlic or garlic powder
  • salt and pepper for seasoning
  • chopped herbs 
  • chopped chilli pepper

For the chili meatballs 

  • Mix all ingredients together in a bowl 
  • Shape into small meatballs and fry them in a large pan

For the fried noodles
  • cook instant noodle soup like direction (I use the spices in the package as well)
  • after cooking drip of the water and let the noodles chill 
  • weanwhile fry leek in a pan, add noodles and meatballs and soybean sprouts

Serve with sliced mango on top.
For more spice you can spice up with soy sauce.

  2. I found this on food gawker, hubby made this for dinner tonight and it was awesome! We used more mango and doubled the recipe and it turned out great. It will make an excellent lunch tomorrow.
